2/3 medium sized ripe tomatoes deseeded and diced

a few sprigs of fresh sage

a small handful of coriander leaves picked and chopped

a sprig of fresh rosemary

juice of 1 lime

a cucumber peeled and finely diced

1 avocado stoned peeled and chopped

extra virgin olive oil

2 spring onions trimmed and finely sliced

1 lime halved

1/2 fresh red chillies deseeded and finely chopped

a few whole coriander leaves

sea salt

2 x 200g wild or organic salmon fillets skin on

for the chilli salsa
