I found that adding black pepper or red pepper worked just as well as paprika depending on taste preference. Also for best results (no clumping of the yolk) I actually put the liquid ingredients in a bowl and let it simmer on top of a pot of slowly boiling water. Every so often I would take out the bowl to insure that it didn't overheat. Turned out perfectly!

3 EGG YOLKS

1/4 cup water

2 Tbsp. fresh lemon juice

1/2 cup (1 stick) firm cold butter, cut into 8 pieces

1/4 tsp. salt

1/8 tsp. sweet paprika
