Ingredients for 4 servings

1 4.5oz clamshell of DOLE Power Up Greens, Baby Kale & Greens blend (any of the three varieties can be used though!)

2 large carrots, shredded or peeled into ribbons

8 brown rice paper wraps (The kind that come stiff and firm in circle shapes.)

2 Tbsp peanut butter, creamy

1 - 1 1/2 tsp maple syrup, grade B

1 - 1 1/2 tsp apple cider vinegar

1/2 tsp freshly grated ginger (use more for more ginger spiciness!)

pinch of salt and pepper to taste

pinch of garlic powder (optional)
